4 cups diced cooked chicken
1 1/2 cups grated cheese
1/2 cup diced celery
1/2 cup low-fat mayonnaise
8 oz cream cheese
1/2 sweet onion, diced
salt & pepper to taste
2 cups crushed Ritz crackers
1/2 stick butter, melted
Combine cracker crumbs & melted butter & set aside.
Blend mayonnaise & softened cream cheese. Combine with all remaining ingredients, tossing lightly. Place in greased 9"x13" baking dish, and top with buttery cracker crumbs. Bake at 350 degrees for 30 minutes.
